GUYS: Speaking of the sidewalk being your runway, our guy has
been on this runway for 38 years. Alvin Charleston has been delivery mail in Chicago’s Grand Crossing neighborhood for most of his life and he’s comfortable doing it. When he was 18 years old his dad told him to get a job so he did and never looked back. Alvin is sort of a celebrity at the Post Office as his experience got him a gig coaching the character Al, the well known letter carrier, in the USPO commercials “If it ships its fits”. Maybe the character Al was actually named after Alvin, what do you think? On the job, Alvin says sometimes he reads the magazines that come and go but most of the time he’s working on his charming smile and making his customers happy. So no matter rain, nor sleet, nor sun or snow Alvin always gets the job done. He might work another 3 years but when Alvin retires he wants to bowl, play with his grandson, and relax in the comfort of his home with family.
FOOD: One thing that reminds me of family is comfort food. Kim Biske in Bolingbrook, IL is the ultimate matriarch in her home…she’s has a daughter, husband, house full of animals including ducks and chickens, she sews, she runs a soap making business, and she always got something on the stove. Her favorite family time recipe she shared with me is Mini Pot Pies in a Biscuit. Not only are these pot pies easy to make, they are delicious and an easy way to use up your leftover meat, vegetables and gravy.
Mini Pot Pies in a Biscuit
1-2 packages Refrigerated Biscuits in tube – “Flaky Layers” type
For muffin size, you will need 1 ½ biscuits per pie,
For cupcake size, you will need 1 biscuit per pie.
1-2 cups of your choice of meat, chopped into bite size pieces, we used turkey
1-2 cups cooked vegetables – we used corn, peas & carrots
1-2 cups Gravy
Coat muffin or cupcake pans with non-stick spray. Cut the uncooked biscuits in half, thinning to half their thickness. Place one half in bottom of muffin pan. For cupcake size, you can stretch the bottom up the sides of the pan, for muffin size, you will need an extra half biscuit, stretched lengthwise and placed into pan to form the sides of the pie.
Fill each pie with spoonfuls of meat and vegetables, then top with about a tablespoon of gravy. Place another half biscuit on top and bake at 350 for about 15 minutes or until biscuits are golden brown.
